Baba Ganoush
Baba Ganoush is a hearty dip that is popular in the Middle East and the Arab world and is great for adding flavor to vegetables, pita or regular bread. Here we suggest our recipe version, but feel free to play around with new ingredients as you wish!
Ingredients
- eggplants
- Garlic
- olive oil
- 1 lemon
- some salt and pepper
- feta cheese and pomegranate seeds for serving
How it works
- Wash your eggplants and place them in a baking dish.
- Next, drizzle with olive oil and pressed or chopped garlic.
- Leave the eggplants in the oven at 200 degrees for about 20 minutes.
- Now you can let them cool down.
- You should now be able to easily peel the skin off the eggplant.
- Chop them finely until the desired consistency is reached.
- Add the lemon zest and lemon juice.
- You can now season the whole thing with salt and pepper.
- Now stir everything well.

eggplant wreath in the oven
Instead of the dip, you can use your eggplants to make this tasty, warm eggplant wreath. All you need is eggplants (we use Oeuf Rouge eggplants), butter, rosemary and we have a recipe video for the eggplant wreath ready for you.
How it works
- The first step is to wash your eggplants thoroughly.
- Now cut them into slices.
- Take a baking pan and arrange the eggplant slices in a wreath shape.
- In a pan, brown butter with some rosemary and garlic.
- Now pour the browned butter into the baking dish with the eggplants.
- Leave the dish in the oven at low to medium heat (100-150 degrees) for about 15-30 minutes.
mountain eggplant salsa
Despite its name, the mountain eggplant is more similar to a tomato in terms of its consistency and taste. That's why it's perfect for adding to salads or as a snack, as well as for salsa. All you need is mountain eggplant, chilies (if you like it a bit spicy) and salt and pepper to taste. In this 34-second video we show you how easy it is.
How it works
- First, remove the outer, leafy skin and wash the mountain eggplants
- Then cut them into large pieces
- If you like things spicy, chop up some chilis at the same time.
- Then process the coarse pieces in a mortar until they reach a salsa-like consistency. Alternatively, you can also use a blender.
And voilà, now just season with salt and pepper and fill – bon appetit!
