Summer is over but not all of your tomatoes have had enough time to fully ripen? Don't throw them away - make this delicious tomato jam instead ๐ !
Ingredients
- tomatoes
- some salt, chili flakes and basil
- juice of one lime
- gelling sugar in a ratio of 2:1 (half the weight of your tomatoes)
This jam can of course also be refined with other herbs and spices, whatever delights your gourmet heart ๐.
How it works
- Remove the stem from all tomatoes and cut a cross into the skin on the opposite side.
- Then blanch the tomatoes, i.e. put them in boiling water for 30 seconds and then plunge them into ice water. This way you can peel them easily afterwards.
- Next, cut them into large pieces.
- Bring the tomatoes to the boil with a little salt, chili flakes and some basil until everything is nice and soft.
- Now add lime juice and gelling sugar.
- Let the whole thing boil again until the sugar has boiled.
When the jam is still hot, put it in well-sealable, sterilizable jars ๐ซ and leave it to cool upside down. This way you can enjoy it for a few months longer and reminisce about your summer balcony.
